
Lately it's been such a struggle to get a veggie in Hudson's mouth. He for sure knows the difference. He loves fruit, breads, dairy ( except for milk, which he's allergic to), water and bagels.
Today I decided to give it another go. I make these amazing Black Bean Burritos, my own recipe.
Brown rice, salsa, black beans, Corn all mixed and cooked together stuffed into a tortilla.. and buttered some butter, lemon and cheese on top, and grilled them in the oven.
I really wanted one for lunch, so I made two. I first started cutting Huds up for him so he could finger it in his mouth, but he wasn't doing that. He wanted to eat the burrito like mama. So, I took half of his burrito and he just ate it. Big bites, with water to wash it down.. he loved it!
I got black beans, corn, tomatoes and green pepper into him! So surprised he ate it.. he hates veggies, you would think he would for sure hate salsa!
I'm going to try to make him his own portions of what we eat at dinner so he can get more used to eating dinner foods.
That's all I really have to say. It excites me!
